When to choose what
Natural Vanilla Extract for
Premium ice cream brands, artisan confectionery, fine bakery, premium perfumery dry-down, “natural” / “clean label” finished products.
Synthetic Vanillin for
Mass-market biscuits, bread, beverage flavour, candle / soap fragrance, F&F gourmand bases, household care.
Ethyl Vanillin (variation)
Stronger / more intense than vanillin (3–4x); used in confectionery and F&F where vanillin alone isn’t enough.
Don’t conflate the two
Labelling implications. “Natural vanilla” requires actual vanilla extract. Vanillin alone cannot be labelled “natural vanilla” — regulators (FDA, EU) audit this.

Buyer FAQ
Cheapest per kg of vanillin equivalent?
Synthetic vanillin is ~100x cheaper per kg of pure vanillin content than natural vanilla extract. A 25 kg drum of synthetic vanillin equals the “vanillin yield” of approximately 800 kg of natural vanilla extract.
Can I use vanillin and label “natural vanilla”?
No. The FDA / EU clearly distinguish: “natural vanilla” requires plant-derived vanilla extract. Vanillin is labelled as “vanillin” or “natural-identical flavour” depending on synthesis route.
Is “natural vanillin” (ex-eugenol from clove) the same as vanilla extract?
No — ex-eugenol vanillin is still a single molecule (vanillin), just derived from a natural starting material. Some jurisdictions permit “natural vanillin” label for this; check with your regulatory team.
What’s the difference between vanillin and ethyl vanillin?
Ethyl vanillin (3-ethoxy-4-hydroxybenzaldehyde) is 3–4x more intense than vanillin. Used in F&F and confectionery as a stronger / more lasting alternative.
